This Mediterranean Chicken is easy to make but packed full of flavors. Serve alongside fresh veggies for a light but filling meal!
Mediterranean Chicken
Serves 6-8
Prep time: 10-15 mins
Cook time : 30-40 minutes
Ingredients:
2 tablespoons Extra Virgin Olive Oil
2 pounds Boneless/Skinless Chicken Breasts
Trader Joes Everyday Seasoning (sea salt, mustard seeds, black peppercorns, coriander, onion, garlic, paprika, chili pepper)
¼ cup White Wine
2 teaspoons Butter
6-8 cloves Garlic, minced
2-3 Shallots (apprx. ¼ cup), minced
2 cups Chicken Broth
1 tablespoon (approx. 3 small or 1 large lemon) fresh Lemon Juice
½ cup Artichoke Hearts
½ cup Sundried Tomatoes
¼ cup Crumbled Feta (optional topping)
Serving Suggestions: serve with ½ cup Quinoa or Brown Rice and Vegetable of choice
Step 1: Pat chicken dry with paper towels, cut into tenders, season both sides liberally with TJ’s Everyday Seasoning
Step 2: Heat Olive Oil over medium-high heat in dutch oven on stovetop
Step 3: Brown chicken, both sides, remove from pan
Step 4: Deglaze pan with wine, reduce by half, lower heat to medium
Step 5: Melt butter, add shallots and garlic, cook until translucent
Step 6: Add chicken broth and lemon juice
Step 7: Reduce heat to simmer, return chicken to broth, add sundried tomatoes and artichokes, cover and cook for 30 minutes
Step 8: Serve with quinoa or brown rice, vegetable of choice and top with crumbled feta, Enjoy!
